November Ball of the Month

Hey, ballers!!!! Get out your food processor, because it's time to reveal the November Ball of the Month! Now that we are all a bit "pumpkin'd out" let's move on to another favorite fall flavor--APPLE!!! Much like the pumpkin balls from last month, these little guys taste like a beautiful bite of apple pie without all the flour and refined sugar. Keep these in the fridge or freezer for a quick snack, lunchbox treat or, heck--you can take these to your Thanksgiving dinner! Pop a couple of these babies in your mouth, and you might just be satisfied enough to bypass the real desserts! If I don't have time to juice, one of these balls and a cup of chai tea is all I need before I hit the gym, so they can serve as a quick and nutritious breakfast as well! These are super fast and easy to throw together, so carve out 15 minutes, mix, blend, roll, and ENJOY!!!!!

Apple Pie Balls

(adapted from reciperunner.com Cinnamon Apple Energy Bites)

1 cup dried apples (the chewy, soft ones, not the apple chips)

1/2 cup soft, Medjool dates

1/2 cup almond butter or cashew butter

1/2 cup oat flour

1 t. maple syrup

1 t. cinnamon

1/8 t. allspice

2 T. almond milk (or any plant-based milk will work)

1/2-1 T. vanilla protein powder*

1. Put everything except the milk in the bowl of your food processor fitted with an "S" blade.

2. Pulse or process until everything is combined and forms a thick, pasty mixture. Add the milk a little at a time until the mixture forms a sticky ball.

3. Roll into balls and place on a parchment-lined baking sheet. Place in freezer until firm, and store in Ziploc freezer bag.

4. Try not to eat them all in one sitting :)

*if you don't have or don't like vanilla protein powder, add 1/4 t. of vanilla extract instead!
